This was one of the first of the high mountain teas, from the Ali San area in the southern mountains of Taiwan. About 20 years ago Taiwan's tea industry went through a radical change; they stopped producing the old teas that were exported to Westerners, and these better oolongs were made for the newly prosperous domestic market. Now we all can appreciate the lovely lemony and creamy flavors of this lightly oxidized oolong. Dry Leaves: Dark green rolled leaves. Liquor: Light gold. Aroma: Potent gardenia and lilac aromas with tops notes of crystallized sugar and fresh citrus. Caffeine Level: Caffeinated Body: The body is medium with some creaminess. This tea may be brewed multiple times. Flavors: Ali San is among the creamiest of oolongs. It gives a nice coating sensation and some butteriness along with lime citrus notes and a quiet, underlying vegetal flavor. Brewing Time: 4 to 5 minutes Brewing Temperature: 205° F
