Tong Mu is a village up a winding valley high in the Wuyi Mountains (Wuyi Shan). This is where many black teas originated. Mike has visited it several times.The tea makers take the large tea leaves from the Qi Zhong oolong tea plant and make a black tea out of it. This tea was made in early April, so the tea is full of sweet amino acids. The tea is rolled and left to oxidize and change color slowly. This allows for the cocoa flavors to develop. This is a new style of tea making and what a joy to taste.
