An exquisite version of the White Peony variety, this is a delicate tea made from unopened leaf buds and the newest two leaves to open on the tea bush. For White Symphony, many more buds are included than is typical for classic White Peony. The liquor is very light, similar to Silver Needles. But the flavor is much more complex: faintly floral, warm and sugary like honeydew or white nectarine. Soft mouthfeel and clean, uplifting finish. If you've been enjoying White Peony, we invite you to savor this more refined version. Steep at 180°F for 3-5 minutes

      I got a musty grass smell from the opened packet. I expected the scent to be a lot lighter. 180 for 1 min was a pale golden liquor with floral flavor. The second steep for 2 min had more color and some grassiness and light astringency. Third steep I forgot to set the timer and was probably around 3 minutes was very grassy and astringent, no longer floral. For white tea I prefer jasmine silver needle over this. I still want to try this cold brewed.

      White teas are really too light for me, but I love adding this one to black or oolong teas to add a bit of sweetness and complexity to the taste. Gets rid of any bitterness from black teas. Lovely to blend with!!

      Not being a white tea fan, I was so happy to have enjoyed this tea. Subtle, not grassy.

      This is the first white tea I actually liked. It is pale, light, and thin, but so, so, gorgeously complex! I can usually get multiple steeps out of a serving too - great mileage for your money!

      This white tea is very light. I like it but I like a stronger white tea. I drink this one with a little peach tea added to give it a heartier flavor.

      Extremely delicate. This is the kind of flavor that I expect from a white tea, a perfect example.

      I don't know if I had an off batch or not, but it really didn't do anything for me. I steeped for 3 minutes and got almost no taste.

      Simple. It's got a very light spring flavor, doesn't stand out much or linger on the palate. I go for this when I want a cup of something warm and slightly grassy.

      Really a meh cup of tea. I get the hints of floral, but not the nectarine or other fruits. It’s a pretty one note cup of tea without much dimension. It’s fine just not my preference.
