    Love this tea! Morning or late night highly enjoyable. I steep at just under boiling but only for a minute (the times listed on the bags are overkill in my opinion - the subtleties are lost in the bitterness that ensues from a long steep). Delicious sweet earthiness, and almost slight smokiness from the high roasting. Again reminiscent of Hoji-cha or kugi-cha from Japan, but with a more floral aspect. Goes well with toast & jam at breakfast, or chocolate for late night sipping. But complete and delectable on its own.

    A lovely roasted style oolong. Before a few years ago I thought of oolong as the tea you get in Chinese restaurants (in USA). Then I discovered the high mountains green oolongs of Taiwan (a completely different profile). And since then the wide variety of oolong teas. This one reminds me of classic oolongs from Chinese restaurants but more refined and nuanced in character. Slightly reminiscent of Hoji-cha from Japan (where I grew up). Good for 3 to 4 steepings, evolving with each turn. One of my current faves.

    Very good sencha. I grew up in Japan, so I know good green tea.

    I pour the boiling water into the teacups to pre-warm, then pour that water into the teapot. I steep 30 seconds only. Lovely color and aroma. Classic taste!
