ERIC HERNANDEZ

Buddhist priest, anthropologist, broken-down scholar who can't afford the dollar store. But I still get my tea here at Adagio. Keemun is king, and Adagio appreciates that.

Golden Monkey has always reminded me of Keemun—I frequently blend the two. But if I were going to choose an everyday tea to use frequently it would be Golden Monkey. Hard water, 212°, 4 minutes—the same rules I apply to Keemun. The taste is comfortable to Keemun. And I really love the Tao's tea tins! They're absolutely reusable.

Keemun from Qimen in Anhui Province, China, has to be one of the finest teas on earth. ADAGIO provides two types of loose-leaf Keemun. It is a very forgiving tea that can stand up to some hard brewing semicolon I use hard water, 212°, 4 minutes, for the perfect cup. Keemun has a wonderful very subtle hint of peaches and it is also reminiscent of chocolate. I don't know why people say it's "malty" because tea does not contain malt. Adagio has always been my source for loose leaf.
