  • JAPANESE SENCHA

    

    Aroma is very mild: of light, dry grassiness with a touch of umami, steamed spinach, and oceanic seaweed/saltiness. Flavor is also mild, of steamed spinach with a bit of green grass and mild polyphenolic bite. Has some polyphenols that come across as a bit astringent, indicating that this is possibly a later flush of leaves or a lower grade of sencha.

  • Sleeping Dragon

    

    Very mild green tea: very light, faint green tea notes and astringency, the faintest hint of light smoke/pan-fried character. Generally bland in flavor, at least there is little astringency.

  • Yunnan Jig

    

    Pleasant, smooth black tea, more brightly fragrant and lighter than an Assam, slightly fruity with a bit of floral character.

  • White Peony

    

    Aroma is moderately floral, smooth, and slightly sweet. Flavor is a smooth, lightly grassy, lightly sweet, lightly honey/floral, lightly mineral-like character.

  • Assam Harmony

    

    Pleasant, fairly smooth Assam black tea with classic Assam flavors, pleasant toasted tea leaf character, light sweetness, and fairly strong Assam spiciness with moderate astringency.

  • Green Assam

    

    I enjoyed this tea, and hope to try a green Assam again one day. Brewing at a lower temperature helped reduce the strong bitterness/astringency.

    Aroma of grassiness, sweetness, and floral characters. Flavor of a dry, grassy, and fruity (dull dried papaya-like) sweetness with floral notes, a hint of smoke, undertones of unripe (non-sweet) apricot, and medium to medium-high astringency. (2.5g tea/200ml H20/3min steep@180F, lower temperature of 158F helped reduce astringency).

  • WU LI QING

    

    Aroma extremely mild, light grassiness with touch of sweetness.

    Flavor also very mild, lightly smoky (more like pan cooked smoke than wood smoke) wilted spinach with light sweetness.

  • JIN SHAN

    

    Aroma is mild, slightly watery, bit of lightly cooked green vegetables and vegetable broth.

    Flavor similarly mild, of mild cooked green vegetables, light umami, grassiness, slight sugar syrup, and delicate floral characters.
